I worked at Café Mozart with Renate and Henry after leaving culinary school in 1977. These were the days when Walter and Rudy worked there.
Renate had this cool way of making spaetzle using a potato ricer.
Henry taught me the “correct” way to ice cakes. He would ice 8 at a time, fast.
I also learned how to make butter cream (mocha was my favorite), and how to properly scrape a 20-quart mixing bowl.
Butter cream:
One flat of egg whites.
10 lbs. of butter.
12 lbs. of shortening.
Sugar water.
